Oven roasted okra
I was never much a fan of okra. I think I may have mentioned this before. I always thought of okra as slimy and I don’t really like my vegetables to be slimy. But, A few years back I discovered that I do like pickled okra, and just recently I decided to try roasted okra. I love it! And my kids love it! Well, most of them anyway.
Oven roasted okra recipe
It seems to be popular to roast veggies with a little olive oil and salt, so I thought, if it works for asparagus and sweet potatoes and beets, why not okra?
I just put my washed okra on my stoneware pan, drizzle it with olive oil and sprinkle with salt and garlic powder. Place in 400 degree oven for 20 minutes. Flip over with a spatula and roast for another 10-20 minutes. Check at the second 10 and 15 minutes to be sure they aren’t burning.
Serve while still hot and crispy.
If you think you don’t like okra, I encourage you to try it just one more time, oven roasted!
