Burdock, turkey and bok choy recipe: A healthy start to the new year.
Everyone seems to have a resolution to eat healthy in the New Year. That means something different for everyone with different diets and eating plans. But, I think most can agree that fewer processed foods and more colorful vegetables are good for our health.
This burdock, turkey, and bok choy recipe with sweet potato highlights the healthy vegetables burdock and bok choy.
I love to cook with burdock, but it is not always easy to find in the stores near my home. My source for burdock is the Asian food market near my parents home in suburban Detroit. Burdock adds a nice flavor and crunch to any stir fry. It is a healthy addition to soup. It even tastes good shredded and raw in a salad or slaw. And, for the wild food adventurers out there, burdock is a rampant weed in many areas and can easily be harvested from the wild areas around us. While there is no wild burdock around where I live now, when I used to work for a friend on her farm garden, there was burdock everywhere. Most farmers would love if you asked to go dig up the burdock around their property.
When harvesting wild burdock, you want the first year plant, without any flower stalk, in order to have the most tender root. And of course, it is seed catalogue season, and there are always seeds to be bought for growing burdock in your garden. There is even more than one variety available to try out. Burdock is more common in Asian cooking, so the best varieties I think, are in the Asian seed catalogues. My favorite source for Asian vegetable seeds is Kitazawa Seed Company.
Bok choy is getting easier to find at the local grocery store. It offers a nice green vegetable alternative for a stir fry or soup, with a nice mild green flavor and a crunchy texture similar to chard or celery. Most of us tend to put snap peas or broccoli in a stir fry. Maybe try bok choy and see if you like it. Following is my burdock, turkey and bok choy stir fry recipe. I served it with sweet potatoes, and the whole family enjoyed it.
Burdock, Turkey, and Bok choy Recipe
This stir fry recipe combines some less common vegetables, burdock, bok choy, and purple cabbage. Together with turkey, it makes a really nice healthy meal.
- 1 small onion diced
- 5 cloves garlic minced
- 1 Tbsp minced ginger
- 2 10 inch roots burdock sliced into 1/8 inch rounds
- 4 heads baby bok choy chopped into 1/2 inch pieces
- 1/2 head purple cabbage sliced into 1/4 inch pieces
- 2 cups roasted shredded turkey
- olive oil
Add onion, garlic, ginger and burdock to large pan with olive oil and saute on medium heat until vegetables are tender.
Add the bok choy, purple cabbage and roasted shredded turkey to the pan. Sprinkle with salt and cook until cabbage and bok choy are wilted but still crunchy.
Add water or broth if turkey seems too dry.
Serve while still warm with sweet potato and a mixed salad.
This recipe can easily be adapted to a plant-based recipe by taking out the turkey and adding some chickpeas in its place. I like the flavor of the stir fry with just the ginger, salt and garlic, but adding in a sauce of your choice is always an option! At One Thousand Foods we hope you enjoy!
