Baking coffee cake on a sunny morning
I can’t believe that May has had such consistently cold and wet weather. But, when the house is cold in the morning, I like to warm it up by turning on the oven to bake something. Sometimes I bake a fruit crisp or muffins, or an egg casserole. Today, I had acorn flour in the pantry, so I made an acorn flour carrot apple raisin coffee cake, and it was delicious!

We had a frost warning again last night! All the garden plants made it through. So, on this cool sunny morning, we had acorn flour carrot apple raisin coffee cake with shredded ginger carrots and elderberry rose hip tea. It was so pretty to look at, but was quickly eaten by all the children as soon as I finished taking my pictures!
This coffee cake is definitely worth making again! The ginger pieces give it a nice tangy spice to balance the nutty sweet carrots and acorn flour. And the elderberry rose hip tea is mild in flavor but sweet enough without adding any sweetener. A perfect tea for springtime and warding off that spring cold.
This sweet and tangy coffee cake is sure to please all who enjoy a little breakfast or brunch treat. And all the fruits and vegetables included make it even a little bit healthy!
- 2 duck eggs
- 2 cups shredded carrots
- 1/2 cup maple syrup
- 2 inches shredded ginger
- 1/2 cup butter
- 1/2 cup raisins
- 1/2 cup finely chopped apple
- 1 Tbsp ground cinnamon
- 1 1/4 cup acorn flour
- 1 tsp baking soda
- 1/4 cup sugar
- 1/4 cup acorn flour
- 1/4 cup butter
Preheat oven to 350 degrees Fahrenheit.
Grease 8x8 or 9x9 glass baking dish with butter.
Mix all cake ingredients together, leaving separate the streusel topping ingredients.
Pour cake batter into baking dish and set aside.
Mix all streusel topping ingredients together, making sure that the butter is in small enough pieces to be well distributed throughout the topping.
Evenly sprinkle the streusel topping over the coffee cake batter, and place in oven. Bake for 30-35 minutes.
Remove from oven and serve warm.
This coffee cake is delicious warm or cold. Most of us enjoyed it warm with a side of shredded ginger carrots and elderberry rose hip tea. But the cold cake was just as tasty a few hours later.
